Mozzarella Meatballs

Just look at that mozz melt...
Ingredients
- 1 3/4 lb of meatloaf mix (veal, beef, and pork)
- 1/4 cup parmesan cheese
- 1 large egg
- 1/4 loaf of Italian bread, cut into cubes, softened in water
- salt
- pepper
- garlic powder
- fresh minced basil and parsley
- about 20 mini mozzarella balls
Step by Step
- Preheat your oven to 400.
- Mix together meat, parm, egg, bread, and all seasonings/herbs in a bowl.
- Form about 20 meatballs slightly larger than the size of a golf ball.
- Make an indent in the center of each meatball with your thumb.
- Place a mozz ball inside and form meatball back to cover the cheese.
- Place a piece of parchment paper on a baking sheet and line up the meatballs.
- Bake for 15-20 minutes.
- Eat alone as a snack or serve with your favorite pasta + sauce as a meal!
